Aji de Gallina is at the Top of My List

My absolute number one favorite dish — as long as someone at my table orders some pollo a la brasa that I can have a bite of — is a delicately flavored chicken stew called aji de gallina. It’s similar in style of preparation to chicken makhani from India or chicken in vodka sauce from Italy. Aji de gallina is flavored with the famous Peruvian aji yellow chile, as well as walnuts and parmesan cheese sauce. To add visual interest, the stew is served with black olives and hard boiled eggs. It is usually served over potatoes, but if I have already had too many potatoes, I ask for it to be served over rice.
